Bitter Rum and Cola
I am not sure how it has been for everyone else; but it seems to me that this past winter has outworn its welcome. So when the sun came out this past weekend, and the temperature climbed up above 10 degrees Celsius on Sunday afternoon, the Rum Chums and I moved our bi-monthly rum tasting outdoors for the first time in almost six months. The air still had some chill; but the rum we were sipping just seemed to taste better mixed with some sunshine.
I was fortunate enough to have scheduled myself off work the next day after the tasting, and since it was another warm sunny afternoon, I spent some time making cocktails with an old friend, the El Dorado 3 Year Cask Aged Demerara Rum.
Maybe the warm weather was responsible; but those cocktails seemed to be tasting particularly good as I soaked up the afternoon sunshine and listened to my tunes on my front deck. The mixed drinks were so good in fact, that I thought I should snap a few pictures and share the recipes here on my website:

Its been several weeks since then, and I suspect the El Dorado 3 Year Old is already on the shelves at the LCBO (Liquor Control Board of Ontario). Fishbowl Spirits Llc. is a company wholly owned by Kenny Chesney, the well-known Country Music Singer from Knoxville, Tennessee. In May, 2013 Fishbowl Spirits launched Blue Chair Bay Rum, which features an assortment of rums which were apparently inspired by the relaxed island lifestyle of the country music star. The line-up includes an assortment of flavoured rums (a Coconut Rum, a Coconut Spiced Rum, a Banana Rum and a limited time only Coconut Spiced Rum Cream, as well as a standard White Rum. Although Blue Bay Chair Rum is based in Nashville, the assortment of rums they produce are distilled in Barbados and then bottled in Rochester NY by LiDestri Food & Beverage.
Three of these spirits, the Coconut and Coconut Spiced rums, as well as the White Rum have been brought into Alberta by Glazer’s Of Canada Llc, and they arranged for me to receive all three rums to review here on my website.
Lime and Maraschino Daiquiri
Blue Chair Bay White Rum, according to the Company Website is aged less than 100 feet from the high water line where there’s something about the sunlight and the wind on the water that gets into the oak casks and into every drop of Blue Chair Bay®.

“… There were light bits of spice wandering into the air with a smattering of buttery caramel. Perhaps I also sense some freshly mashed banana, vague notes of tropical fruit, some whispers of marshmallow, and hints of mint and licorice. When I add ice to the glass, the light scents seem to blow away in the breezes, leaving only phantoms of butterscotch above the glass …”

Jamaican Pot Still Cocktail
Rum Nation has been delighting me over the past few years with their fresh approach to the spirit we enjoy as rum. Fabio Rossi, who owns and manages the company, purchases select rums from various distillers in the Caribbean and the Americas, and provides a rather unique assortment of rare limited edition rum bottlings to both the European, and the North American market. Up until recently, all of Fabio’s rums have been well aged wonders. Some are aged solely in their country of origin where tropical aging increases the rate of interaction between the oak and the wood, and some have also seen a second period of aging in Europe where the more moderate climate allows for a more delicate interaction and additionally refines the spirit in a more subtle way. Sampling these well aged marvels has given me a greater appreciation of how both the dimensions of time and location affect the outcomes of maturity and taste with respect to aged spirits.
Last year, Fabio went in a different direction entirely with his Rum Nation Jamaica White Pot Still Rum. In the case of this spirit, the dimensions of time and location with respect to maturity are rendered irrelevant. Instead, the dimension Fabio chose to explore within this rum monster was flavour, as this new rum revels in its brutish, unaged, concentrated (bottled at 57 % alcohol) Jamaican pot still flavour (and it is anything but smooth and refined).
Valrhona Tainori Chocolate

“… When I took my first cautious sniff from the glass, I was struck by the depth and the intensity of the bouquet. This rum will not be for those who fear adventure in their glass. There is an omnipresent resin-like aroma similar to model airplane glue which dominates the breezes above the glass along with a grassy (chlorophyll like) scent which rides at the edges of that resin …”

Havana Club is a Cuban Rum produced by Havana Club International (a joint venture between the Cuban Government and Pernod Ricard) currently produced in two Cuban locations, San José de Las Lajas and Santa Cruz del Norte, Cuba. According to tradition the production of the rum which was to become Havana Club began in 1878 when Spanish immigrant José Arechabala established Destileria La Vizcaya in the port city of Cárdenas, Cuba. The distillery remained in the hands of the Arechabala family and in 1934 José’s grandson (also named José Arechabala) apparently created the recipe for Havana Club Rum and began to market it throughout the world. However, the family lost control of the distillery and the brand when after the Cuban Revolution of 1959, the Cuban Government nationalized the distillery and company.
Mojito Tonic with Havana Club Anejo 3 Anos
Havana Club Añejo 3 Años is a pale straw coloured rum spirit which has been aged for 3 years in Cuba. Because of the current difficulties between USA and Cuba the distillery which produces the rum must source its aging barrels from outside of the USA. This means that first fill American oak is almost certainly not used in the aging process, more likely the distillery uses second or third fill barrels which would be sourced from its Caribbean neighbors. Although the rum exhibits some colour it is nevertheless sold as a white cocktail rum which is said to be particularly well-suited for the Cuban Mojito.

“… The breezes above the glass are lightly sweet with hints of cotton candy, butterscotch and a light vanilla. Although it takes a minute or two the scent of fresh-cut grass becomes stronger as the glass sits, as do impressions of fresh plantain and canned pears. Bits of sandalwood struggle out of the glass which indicates that although the spirit appears to be filtered, some indications of wood aging are apparent in the air above the glass …”

In my part of Canada, Lamb’s is one of the most popular rum brands, and I thought it was time that I should visit their popular white rum on my website. For those who do not know, Lamb’s is a Corby Brand who trace the rum’s history all the way to 1849 when Alfred Lamb who opened his wine and spirits business in London. His method of aging rum in his cellars under the Thames river was supposed to be one of the secrets behind the unexpectedly smooth taste of his rum brand. Of course the rum no longer is aged in Britain but it does maintain its Caribbean heritage as the blend is sourced from a variety of Caribbean rums which have been aged for a minimum of one year in oak casks. The final rum is filtered clear and bottled at 40 % alcohol by volume and sold as Lamb’s Genuine White Rum.

“… the breezes above the glass brought forwards the light scents and smells of a very mild butterscotch, green banana, a mild citrus zest, some light sandalwood spice, and a light cotton candy aroma. Allowing the glass to breathe resulted in the identification of a vague sort of ‘grassiness’ and the return of that impression of mustiness …”

Last year, Tanduay Holdings began its American Invasion by placing two new rums into the North American market. For those who do not know, Tanduay is one of the very largest Rum producers in the world. (The reason they have been relatively unknown in North America is because their Asian rum is produced in the Philipines and sells almost exclusively into Asia.) This invasion was launched with two premium (a Silver, and a Gold) rums. The Tanduay Silver Rum reviewed here is a blend of rums aged up to 5 years and filtered to be a pale straw coloured spirit meant for mixing high-end cocktails.
Note: The origin of Tanduay Holdings Inc. can be traced to 1937 when The Manilla Wine Merchants Inc. was incorporated. This company was basically an amalgamation of several business interests, the important one for our discussion being the Manilla Steamship Company which held agricultural interests in the Western Visayas and had been producing rum (and other spirits) in the Philippines since at least 1893. In 1999, the Manilla Wine Merchants Inc. formally changed their name to Tanduay Holdings. (For more information please visit the Tanduay USA Website.)

“… When I raise the glass to my nose, a gentle but firm butterscotch toffee rises out of the glass followed by a soft waft of fine oak spice, soft banana and lightly sharp orange peel. I allowed the glass to breathe, and enjoyed developing scents of light baking spices (vanilla, cinnamon, and ginger) and the delicious scent of light brown sugar …”
As you will see when you read the review, I enjoyed mixing a few daiquiri recipes with the Tanduay Silver. For your enjoyment, I included two recipes, the Lime and Maraschino Daiquiri, and Tanduay # 2 (based upon the Bacardi No. 2 Daiquiri).

The Brugal Distillery was founded in 1888, by Andrés Brugal Montaner. Over the next one hundred and twenty years the company grew steadily, and it is now one of three large rum distillers in the Dominican Republic. The original family which founded Brugal is still in the control. George Arzeno Brugal, is the current chairman, and most of the board members are direct descendants of the original company founder.
Brugal Especial Extra Dry Rum is produced using the company’s proprietary double-distillation technique which apparently creates a clean, dry rum which contains fewer of the heavy alcohols which tend to provide other rums a sweeter flavour profile. The Especial Extra Dry is blended from a mix of rum spirits which have been aged a minimum of 2 years and up to as many as 5 years in White American Oak casks. The rum is triple charcoal filtered, and was developed as a high-end cocktail spirit meant to compete with ultra premium Vodka.

“… The initial scents above the glass are lightly sweet with indications of cane sugar and lightly toasted marshmallows. As I give the scents and smells time to drift in the breezes above the glass, I notice a touch of vanilla in the air and the light spiciness of lemon peel, sandal wood and cardamom spice …”

Rum continues to be a spirit on the rise. There was a time not long ago that when I stopped by a local store to buy a bottle of rum, I had really only two or three choices, and they were all named Bacardi. Now it is not uncommon for me to see up to twenty different rum brands even in the small liquor stores, and some of the large stores will have as many as 50 different brands to choose from. When I talk to the local merchants, they all tell a similar story, more and more people are asking for rum and some of them even come into the stores brandishing my reviews as ammunition.
My Rum Howler Awards are published each year. They represent my yearly proclamations regarding the best rums which I have tasted within that particular year. As is the case each year, all of my Awards are based upon side by side tastings within each category of spirit. I taste the spirit neat, and I also mix a few cocktails. Sometimes I have my friends help me. All rum samples which I receive to review on my website each year are automatically considered for the awards. I do my review, and then I set aside the remainder of the spirit for the end of the year judging. I also receive additional industry samples specifically for these awards.
My side by side tastings are completed, and it is time for me to reveal the recipients of my 2013 Rum Howler Awards for Excellence in the Production of Rum.

In fact, the Brugal Distillery has become an institution in the Dominican Republic. Just about every friend of mine who has visited this the Dominican Republic has a vivid tale to tell of their amazing bus ride to the distillery, and another tale to tell of how much fun it was to sample the Brugal Rum.
Brugal Titanium Rum is a triple distilled premium white rum produced primarily for the domestic market (and in parts of Europe) as a high-end cocktail spirit meant to compete with ultra premium Vodka. It is a pity that this rum is not widely available; based upon the tasting sessions my friends and I conducted this past August, it just might be the very best white rum in the world!

“…The nose is lightly effervescent with a spiciness which reminds me of the lemon-like scent of coriander seeds and the rye-like scents of ginger and cardamom spice. A light sugar cane scent is evident, as well as hints of anise and licorice, light mushy banana smells and perhaps a touch of mint …”
This is a refined spirit filled with spicy character and suave refinement within the flavour nuances. Although this rum is not widely available, it is still a fact that the Brugal Titanium is one of the best white rums I have sampled to this point in my rum explorations!

I am very near to the end of my white rum countdown and for the third time, (perhaps the fourth depending upon the origin of Potters Superior Rum), a rum from Demerara County in Guyana has found its way onto the list. This is no accident, as Demerara County (in Guyana) is popular across the world for its rich, three hundred year history of rum production. Using a combination of old wooden stills in conjunction with modern stills and distilling techniques, Demerara Distillers Ltd. (DDL), has built a reputation for outstanding quality and consistent production. In fact, Demerara Distillers is the currently the largest supplier of bulk Caribbean Rum to Europe and North America.
The El Dorado 3 Year Cask Aged Demerara Rum is blended from aged stocks (the youngest being no less than 3 years old) and then filtered twice through charcoal filters to produce a clear rum. All of the Demerara Rum produced by El Dorado is aged exclusively in American oak (bourbon barrels).

“… In my mouth the taste is light but sweet. The rum has a pleasant soft texture with light oil-like mouth-feel. There is no bitterness and the soft butterscotch/caramel flavours remain firm through the palate accented with light minty candy-like flavours. There is also a light spiciness which hints at citrus zest and banana peel. As I sip I also begin to sense very light undercurrents of dry fruit, chocolate and a light but firm impression of baked coconut …”
Note: I originally reviewed the El Dorado 3 Year Cask Aged Demerara Rum four years ago as one of my original reviews to open the website. This however, is a new review, based upon tasting sessions with a more recent bottling.
