Wiser’s Legacy Canadian Whisky (a Corby Brand) was released in early 2010 as a new entry into the fledgling “Super Premium” category of Canadian Whisky. At the time, a few other Super Premium Whiskies already existed in the market-place (Wiser’s own Red Letter, and Crown Royal’s, Cask No. 16 and Crown Royal XR); but the category hadn’t really caught the buying public’s imagination. In fact the Super Premium category had seen more failures than successes to that point (at least as far as Canadian Whisky was concerned). However the tipping point for the category seems to have been the year 2010, and the brand which (in my opinion) which helped the most to bring about a this change was Wiser’s Legacy.
This whisky is produced from a rye forward mash bill (Canadian rye, rye malt and barley malt) using a slow copper pot distillation technique which was ‘fine-tuned’ to capture the very specific flavours and aromas during distillation. The new oak barrels used to age the resulting distillate were lightly toasted rather than heavily charred to help bring more of these specific flavours forward. The final results were obviously good as the Wiser’s Legacy was one of the key Whiskies which led the charge of Canadian Spirits into the Super Premium Category, and into the consciousness of collectors and connoisseurs.

” … Thick oil coats the throat with an oak and spice explosion. The exit leaves the mouth puckered somewhat from the dry woodiness, and the throat is assaulted by spices which grow hotter in the throat than they were in the mouth. At the end of the finish, typical Canadian rye flavours finally appear en masse to battle the youthful oak down the throat. The overall impression is that something awesome just might have happened in my throat, but it is hard to describe fully what it was …”
The Legacy is extremely interesting because it is such a departure from a regular Canadian whisky. There is a great deal of complexity introduced by the young oak and this is definitely a giant step towards a more defined bourbon taste profile. What is missing, is the typical smoothness that Canadian Whisky is famous for. What is extra, is a rough and ready whisky which has one of the most complex flavour profiles I have experienced in Canadian Whisky.

I like to go back to my early reviews and re-sample the spirits to see how time and experience has changed my perceptions. (It could also be that the spirit changes over time.) This afternoon I opened a bottle of Corby Royal Reserve Canadian Rye Whisky and sampled it next to my old tasting notes. I decided to make some minor adjustments to my tasting notes, and to my original score.
This is a brand which traces its roots all the way back to a time before confederation, when Henry Corby began to distill whisky on the banks of the Moira River. In 1881, Henry’s son, also Henry (aka Harry), took over, and through the next ten years the Company began to bottle their own brand of whisky and sold it under the name of Corby.
Today Corby Distilleries Ltd. produces a strong portfolio of whisky brands which includes Corby Royal Reserve, Hiram Walker Special Old Rye Whisky, as well as the entire Wiser’s family of whiskies.

“… The aroma is one of oak spices mingled with rye, and an underlying butterscotch and vanilla. There is a touch of roughness in the air which some will find offsetting. I actually like a rye whisky to have some kick, so I am not put off rather I feel anticipation as I lift the glass …”

Pike Creek is a 10-year-old Canadian whisky produced from a double distillation in small column copper stills, and aged in ‘first-use’, white oak bourbon barrels. (The term ‘first use’ refers to an oak barrel which has been used only once previously, in this case to age American bourbon whiskey.) Once aged and blended, the whisky is finished in vintage port wine barrels.
Pike Creek was originally released in the late 1990s as part of Corby’s initiative to introduce new high-end Canadian whiskies into the North American market. Unfortunately the whisky was discontinued after only a brief time as consumers seemed uninterested in a the new premium product. The whisky was re-introduced last year as the profile of Canadian Whisky has recently undergone a bit of a renaissance world-wide and demand for whisky at the premium end of the market has seen a sharp increase.

” …The immediate nose is of caramelized brown sugars, rye grain, field berries (blackberries and raspberries) and bits of red licorice. Some wood spices build in the glass as it breathes (or maybe I just took my time about noticing them). I also seem to sense a bit of dark fruit and chocolate similar to Christmas fruitcake in the air …”

Lot No. 40 (Single Copper Pot Still) Canadian Whisky was first released in the 1990′s as an upscale connoisseur’s whisky for the North American market. Alas, timing is everything, and the whisky never really caught on, as apparently the market wasn’t quite ready for such a new style of Canadian Whisky back then. However, with the new surge of interest in Canadian Whisky across North America (and in particular at the premium end of the market), Corby (the owner of the Wiser’s Brand), is optimistic that the time for this whisky has finally arrived.
Lot No. 40 is, make no mistake about it, a new style of Canadian Whisky. It is made with locally grown rye which has been distilled upon a single 12,000-litre copper pot still. The final whisky is aged in new oak barrels to showcase the creamy caramelized flavours which new freshly charred oak barrels bring.
Dr. Livermore, the current Master Blender at the Hiram Walker Distillery, elaborated on the whisky for me:
“Without getting into specific recipes, Lot 40 is comprised of 100% of our (Hiram Walker) rye whisky. This whisky was made via pot distillation and subsequently aged in new casks. There is a proprietary proportion of distillers malt(s) used in the brewing process that allows for conversion of the rye grains into fermentable sugars. The brewing process is made in small batches according to the traditional recipes dating back to the early 1900s.”

According to the website, Avion Silver Tequila is a pure 100% Weber Blue Agave tequila made from the hand-picked agave grown in the Highlands of Jalisco, Mexico. As a highland tequila,we can expect the Avion Tequila to exhibit strong fruity citrus notes and to have a little hot pepper in the delivery and in the finish. (This is as opposed to lowland tequila which has stronger earthier flavours of agave and less hot pepper.)
To produce Avion Tequila, the harvested agave from the highlands is first slow roasted in brick ovens to bring out its natural flavors and aromas. After distillation, but before the tequila is bottled it is run through a proprietary “Ultra Slow Filtration” process which apparently lasts ten times longer than the filtration process for other tequilas. Something good must be happening because according to the Judges at the 2012 San Francisco World Spirits Competition, this tequila is pretty darn good. They awarded Avion Silver Tequila as the Best Unaged White Spirit, and then gave it a Double Gold Medal for the second year in a row.
This product has been brought into my local market by Corby, and I was delighted when the local rep arranged for me to receive a bottle to review on my website.

“… When I brought the glass to my nose, I was taken aback. The nose is wonderful. There is a light effervescent aroma of grapefruit zest which caught my attention immediately. The aroma is very reminiscent of the smells of springtime just after a light rain shower; it is fresh, clean and very enticing… “

Hiram Walker Special Old Canadian Rye Whisky, is part of the stable of Canadian whiskies produced and owned by Corby Distilling Ltd. I was presented with a bottle of this whisky about eleven weeks ago by the Brand Ambassador for Corby and Wiser’s, Robert Carson. This was part of a larger allotment of samples which was provided when they learned I planned to do a series of reviews of their whiskies on my blog. The bottle is labeled as a Canadian Rye Whisky and is bottle at 40 % alcohol by volume.
Here is an excerpt from my review:
“…Omigosh! The whisky fairly explodes into the mouth full of dry aggressive flavour and spice. Rye, toffee, and citrus fruit all seem to jump onto the palate at once and battle for supremacy. A thin layer of honey underneath provides a counterbalance, and a nice wave of oak spice is inter-wound throughout the delivery….”

Henry Corby began his involvement in the distilling industry in approximately 1841, buying and selling grain at a grist-mill on the banks of the Moira River. By 1859, his distillery operation had become as important as his milling operation and so the distillery was incorporated as a separate company.
In 1881, Henry’s son, Henry (Harry), took over, and through the next ten years the Company began to bottle their own brand of whisky and sold it under the name of Corby. From 1905 to 1935, the company experienced a series of mergers and acquisitions which first resulted in the assets of Corby, and Wiser’s being consolidated and then in 1935, Hiram Walker - Gooderham & Worts Ltd. became the majority shareholder in the H. Corby Distillery Limited, acquiring 51% of the company’s equity.
Throughout the period of the 1960′s to the present, Corby established itself as a leading spirits company, expanding the distribution of its domestic portfolio and increasing its representation of internationally renowned spirits. Acquisitions of leading worldwide brands and trademarks, and an expansion of the portfolio to include rum, gin,and vodka, as well as other spirits has allowed the company to enter the global stage with its portfolio of products. Currently Corby Royal Reserve, Hiram Walker Special Old Rye Whisky, and the Wiser’s family of whiskies are all produced by Corby Distilleries Limited.
I was presented with a bottle of Corby Royal Reserve Canadian Rye Whisky about eight weeks ago from the National Brand Ambassador for Corby and Wiser’s. “…I taste a nice old-fashioned rye profile with a light dryness that goes for the tonsils. The rye is crisp on the tongue with the dryness has the ability to slightly pucker the palate. A good dose of caramel arrives with the rye, and the oak spices carry flavours of fresh fruit and citrus peel… “
