Founder, John Philip (J.P.) Wiser, purchased a distillery in Prescott, Ontario in 1857, and began to produce Wiser’s Whisky. In fact the J.P. Wiser Distillery may have been the first to use the term “Canadian Whiskey’ on their labels, as this is how the whisky was proudly introduced at the 1893 Chicago’s Wold’s Fair. From the beginning, J.P. Wiser established his brand as a quality whisky with high standards of production. As a result the distillery grew, as did the popularity of his style of whisky. By the early 1900′s Wiser’s was the third largest distiller of whisky in Canada.
The company merged with the H. Corby Distillery Company sometime after the death of J.P. Wiser in 1917. Shortly after in 1932, production of the Wiser’s brands moved to the Corby Distillery. A controlling interest in the Corby Distillery was acquired by Hiram Walker several years later, and by 1989, the Corby Distillery was closed, and all production was moved to the Hiram Walker Distillery where all Wiser’s brands are currently produced. Through all of these changes the Wiser’s Brand has been recognized as a vital component of the company’s portfolio of brands, and now, 150 years later after it all started, Wiser’s remains one of Canada’s leading whisky brands. In fact, Wiser’s is one of the top-selling brands of Canadian Whisky worldwide.
I have been on a bit of a mission these days re-sampling the spirits from older reviews, and seeing if my views have changed over the course of the last three to four years. Recently I sampled a new bottle of Wiser’s Small Batch. Although my impressions were very similar to my original review, I nevertheless revised the review slightly to account for the small changes in my perspective.

“… Oak and brown sugar rise from the glass which has a nice rum-like accent. As the glass breathes, rye spice, caramel, oak and cedar, corn, tobacco, marmalade and baking spices round out the nose which is remarkably deep and complex. I found nosing the glass to be thoroughly enjoyable …”

Beluga Noble Gold Line Vodka is an exclusive ultra-premium Vodka and according to the Beluga Website, it is manufactured from malted spirit and pure Getreidemalz Siberian spring water. Even though artesian spring water is naturally pure, for this Vodka, the spring water must also undergo an extra filtration for an even higher level of purity. After being distilled five times, the vodka is enriched with special ingredients such as rice extract and golden root (rhodiola rosea) extract. The addition of minute quantities of special ingredients is consistent with what I know of traditional European production methods where each distilled vodka has its own recipe and its own special ingredients. It is these special ingredients used in very small proportions which contribute to the individual character of each Vodka. (By small quantities I really do mean small; typically these extra ingredients are measured in parts per million.) After all of this, the Vodka is rested for 90 days before bottling. This rest period apparently allows the molecular components within to stabilize allowing for a smoother more velvet-like mouth-feel and taste.
Beluga Noble Gold Line Vodka has recently been introduced into my home Province of Alberta. This is a super premium Vodka which is priced well above anything I have seen to date in the Vodka category (approx $175.00 per bottle in Alberta). A bottle was delivered to me by Thirsty Cellar Imports, who are importing this spirit and I was asked to provide a review on my website.
Here is an excerpt from my review:
” … The first taste was lightly sweet and lightly spicy with a flavour I would describe as soft and clean. Hints of lemon tantalized my mouth, and I seem to taste mild hints of bay leaf and thyme, and perhaps an ever so light impression of ginger. As the vodka warmed, the flavours increased in strength; but they never become more than vague impressions. It is almost as if I feel the flavour rather than taste it… “

The Plantation Guyana 1999 Rum is a pot-distilled, Demerara rum which is produced from molasses using an extra long fermentation period prior to distillation. The rum is first aged in Guyana in used bourbon barrels after which it is transported from Jamaica to France by Cognac Ferrand to be finished in their own warehouses and of course their own Cognac Casks.
Cognac Ferrand has long had a special relationship with a variety of Caribbean rum producers which is based upon the rum producer’s need for quality oak casks to age their rum. Based upon this relationship, Cognac Ferrand is able to acquire certain old and unique batches of rum from various Caribbean sources, which they bring back to France and finish in their own warehouses and of course their own Cognac Casks. This Demerera Rum was one such unique batch of rum acquired by Cognac Ferrand. It was bottled at 42 % alcohol by volume as part of Cognac Ferrand’s growing line-up of Plantation Rum.
Here is an excerpt from my review:
“…The initial nose from the glass is full of oak tannins which have been tainted with a woody spiciness, rich toffee,and orange peel. I smell light baking, an almond nuttiness, and a firm vanilla. I like the nose, it is spicy, and full of character…”

Herencia de Plata Reposado Tequila is a 100% Blue Weber Agave Tequila produced by TEQUILAS DEL SEÑOR, S. A. DE C. V., a mid-sized, fourth generation family company located in Guadalajara, Jalisco, Mexico. The company was founded in 1943 and currently produces a number of tequila brands which include, Reserva del Señor, Sombrero, Tekali, Herencia Histórico, and of course Herencia de Plata. The word ‘Herencia’ is apparently related to the english word ‘heritage’, and indeed, the Herencia de Plata has an impressive heritage. The tequila has been served by Mexican President, Vicente Fox to Queen Elizabeth II; it has won awards internationally, and it was originally produced to commemorate wedding of Juan Garcia, the son of the of the company founder, Manuel Garcia.
I originally reviewed the Herencia De Plata Reposado about four years ago, and I decided it was time to revisit this tequila to see how it and my perceptions may have changed.
“…The tequila is rather clean and crisp. The typical flavours one expects in tequila, the somewhat earthy agave flavour, the orange and lime citrus, and the thrust of white pepper are all wonderfully mixed in a crisp, sharp, but very pleasing combination…”

Blackheart is a relatively new spiced rum from the Blackheart Rum Co, a whole owned subsidiary of Heaven Hill Distilleries. The rum caught my eye, or rather the blackhearted siren on the label caught my eye at a local trade show, and I decided to investigate this new over-proof offering in the spiced category. The local importer, Diamond Estate Wines and Spirits, was more than happy to accommodate me by providing me a bottle to review as well as sell sheets and pictures.
Those sell sheets give a glimpse of the marketing strategy:
“Blackheart Premium Spiced Rum is imported rum with spice, caramel and other natural flavors. Blackheart is a high-proof spiced rum that embodies an edgy, hip lifestyle. It is premium quality rum without the premium price.”
Bottled at 46.5 % alcohol by volume, the rum may indeed have a bit of an edge to it. Although I guess I had better get tasting to find out.

“… The initial nose is tainted with hints of black cherry, cinnamon, licorice and indistinguishable peppery spices which accent the caramel rum scent. The combination is quite interesting and reminds me of Dr. Pepper soda (but not nearly so sweet which I hope bodes well for the spiced rum) …”

Pyrat Rum is owned by Patrón Spirits, a company created in 1989 by John Paul DeJoria, and Martin Crowley. The company does not own a distillery, rather they act as a third-party company sourcing what they believe to be the best stocks for their products and blending them according to their own formulas. Recently I accepted a sample bottle of the Pyrat Rum XO Reserve provided through Select Wines and Spirits.

“… The initial nose brings forward a candied orange/tangerine scent which immediately reminds me of Grand Marnier. The rum smells rather sweet and the nose has a light wine-like quality. Impressions of green grapes seem to be underneath. Further nosing of the rum brings reminders of lemons, butterscotch, and something spicy like cinnamon and cloves …”

According to the Jose Cuervo website, it all began in 1795 when Jose María Guadalupe de Cuervo was began to commercially produce his Mexcal wine spirit based upon an official permit from the King of Spain. By 1812, he had established La Rojena, the distillery which to this day still produces Jose Cuervo Tequila. By 1844, Jose Cuervo Tequila was being distributed within Mexico, and in 1873 the earliest known documented export of the Tequila outside of Mexico occurred when 3 bottles of Jose Cuervo were transported across the United States border by donkey. Those exports have continued (although no longer by donkey), and now the Jose Cuervo brand is the best-selling tequila brand in the entire world.
All Jose Cuervo branded Tequila is made in the central Mexican town of Tequila, in the state of Jalisco. The Jose Cuervo Tradicional is produced from 100% blue agave, and aged (or rested) in oak barrels (for less than one year).

“… The delivery is quite soft in the mouth as the spirit seems to have a bit of an ‘oily’ consistency. The herbaceous agave flavour is somewhat muted (I am reminded of baked squash, and grilled pineapple with a light dusting of white pepper). Hints of light oak, vanilla, and honey accompany that mild, fruity agave flavour across the palate. Although the agave is mild across the palate …”

I was surprised when I received the press materials for Luksusowa Wisniowa (the cherry flavoured version). I discovered that the Vodka Liqueur which carries the Luksusowa name may not in fact use the potato based Luksusowa Vodka as its base spirit. Instead, Luksusowa Wisniowa (according to the press materials given to me anyway) is a cherry flavoured vodka made from real cherry fruit and the finest grain spirit.
Irregardless, of how the spirit was produced, the deep reddish tones of the spirit and its lovely cherry flavour make it a perfect flavoured Vodka for Valentines Day Cocktails, which is why I have chosen today to publish my review:

“… In the breezes above the glass I notice quite a bit of spice in the air and the scent of a lightly sweet hard cherry candy. The spice reminds me of cardamom or ginger and seems to give the aroma a light effervescence which was rather unexpected. Hints of menthol arise, and although I am not really sure, I seem to receive an impression of Ruby Port wine in those breezes …”

Wild Turkey Bourbon is distilled and bottled by the Austin Nichols division of Campari Group. The distillery located near Lawrenceburg, Kentucky was built by the Riply brothers in 1869, In 1952 by the Gould Brothers purchased the facility which was later bought by Pernod Ricard in 1980 who in turn sold it to the Campari Group in 2009.
Wild Turkey American Honey is a bourbon based liqueur crafted from Kentucky Bourbon and wild honey. I received a bottle for review a few months ago, and after much delay finally got around to providing this review:

“… The entry onto the palate is relatively smooth with the sweet honey flavour melded nicely into the bourbon. This tastes much like the nose implies. Honey, butterscotch, and oak with some nice tobacco and vanilla accents. Some of the spiciness reminds me of rye, which is not surprising as Wild Turkey Bourbon is known to have a higher than average rye content …”
And because this is the week of Valentines I have added a great seasonal cocktail based upon the American Honey, called the Honey Passion Cocktail.

Not that long ago, I had a discussion with a well-known Master Blender (from a major producer of whisky) about the rush of spiced and flavoured rums and whiskies which are entering the marketplace. I lamented the fact that most of these spirits were constructed using young inexpensive spirits as their base, rather than beginning with a spirit which already showed age and character. The master distiller gave me this ‘father knows best’ look and explained that this category was meant for the new spirits consumer as an entry-level product, and using a better spirit as the base would just be a waste of good whisky (or rum). I countered that I thought the spiced and flavoured category could be much more; but I also quickly changed the subject. (I could see that he thought I was nuts).
Well maybe I am nuts; but recently, I actually received a sample of just the very kind of spiced whisky I had been talking about, Highwood Distillers - Centennial Spiced Canadian Whisky. Unlike most of the spiced and flavoured whiskies which have sprung up recently which use a very young whisky as the base for the spirit, Highwood’s Centennial Spiced Whisky uses a well aged 10-year-old whisky, (their own Centennial Rye Whisky) as the foundation for this spiced spirit.
And I am happy to report, that as I suspected, quality always shines through as my review attests, here is an excerpt:
“… Rather than a whisky buried by spice, we encounter flavours of vanilla, ginger, and cloves (and yes butterscotch too) which are lifted by the character of the well aged Centennial Whisky. Although the combination of spices does not appear to be complicated, there is a punch of ginger in the flavour profile that to me, taste’s absolutely brilliant …”
