Manhattan

The Manhattan

2 oz Canadian Rye Whisky (substitute Bourbon, or Tennessee Whisky)
3/4 oz Sweet Red Vermouth
Dash of Angostura Bitters (optional)
3 Large Ice cubes
Maraschino Cherry
Twist of Orange Peel

Add the whiskey, the Vermouth, and the optional bitters with 3 large ice cubes in a Martini Shaker.
Shake gently to chill the mixture.
Spear a cherry with a long toothpick and place it in a chilled glen cairn glass.
Strain the mixed ingredients over the cherry but do not add the ice.
Rub the cut edge of the orange peel over the rim of the glass and twist it over the drink. (This will release the oil from the orange zest into the drink) Discard the peel.

Garnish with orange, lemon, or lime slice if preferred.

Now the Perfect Manhattan is made the same way just with a fifty fifty mix of sweet and dry vermouth

The Perfect Manhattan

2 oz Canadian Rye Whisky
3/8 oz Sweet Red Vermouth
3/8 oz Dry Vermouth
Dash of Angostura Bitters (optional)
3 Large Ice cubes
Maraschino Cherry
Twist of Orange Peel

And the Cuban Manhattan is made like a Perfect Manhattan except we substitute dark Cuban rum for the rye.

The Cuban Manhattan

2 oz Dark Cuban Rum (or suitable dark rum substitue)
3/8 oz Sweet Red Vermouth
3/8 oz Dry Vermouth
Dash of Angostura Bitters (optional)
3 Large Ice cubes
Maraschino Cherry
Twist of Orange Peel

Of course many other variations are common.  The Dry Manhattan substitues Dry Vermouth for Sweet Vermouth in the original recipe,  a Ruby Manhattan substitutes Ruby Port for Vermouth, and a Latino Manhattan substitutes White Rum for whisky.
