Rum Cocktail: Cuba Libre’
Cuba Libre’
(the classic Rum and Coke recipe)
1 1/2 oz. light Cuban Rum
(or a suitable alternate like El Dorado 3 Year Cask Aged Demerara Rum)
4 to 6 oz Coca Cola
Lime wedge
3 -4 Large Ice Cubes
Rub the rim of a standard rocks glass or highball glass with lime
Squeeze the lime over the glass to release some juice into the drink and fill with the glass with ice
Add Rum and fill with Coca Cola
Drop in the lime wedge and stir lightly

Here is a variation on the theme which I love when sipping Flor de Caña Centenario 12.
The Flor De Libre’ for Sipping
- 1 ½ oz Cola (Mexican Cane Cola is good)
- 1 ½ oz Flor de Caña Centenario 12
- A sliver of Lime
- 2 Large Ice Cubes
Add a sliver of lime into the bottom of the glass
Place the ice on top of the lime
Mix the rum and cola into a glencairn glass.

And yet another variation I love with Havana Club Barrel proof Rum. (Now called: Havana Club Selección de Maestros)
Cuban Cane Harvest
(A Rum and Coke made for sipping)
1 ice-cube
1 oz Havana Club Selección de Maestros
1 oz Classic Coke
a dash of cinnamon
Pour the rum over the ice-cube.
Add the classic coke slowly so that it floats on top of the rum.
Sprinkle just a smidgen of cinnamon on the very top.
Do not stir, let the cinnamon and coke slowly melt into the cocktail.
Sip and Enjoy!
