Cuban Mist

The Mojito is one of the quintessential rum cocktails. It is a tall refreshing drink that combines white rum, lime juice and mint. A good dollop of sparkling water and some ice completes it, and on a hot day, it is hard to beat. I like the mojito, but to be honest, sometimes I’m looking more for a cocktail that I can sip rather than one to quench my thirst.

So I decided to shorten the mojito removing most of the sparkling water and ice.

I will suggest that this cocktail be called, Cuban Mist:

Cuban Mist

2 Oz White Cuban Rum (Santiago de Cuba Ron Carta Blanca)
2 tsp simple syrup
Juice from 1/2 lime
Sprigs of Mint
3/4 oz Sparkling Water
Ice

Add the Rum, the simple syrup and the lime juice to a metal shaker
Crush one mint sprig on the inside of the shaker and then add it to other ingredients in the shaker as well .
Add in the ice and shake until the metal shaker frosts
Strain into a small chilled  glass
Top with 3/4 of an ounce of sparkling water
and one small ice-cube
