Bajan Rum Cocktail

When using an aged Bajan style rum in a cocktail we sometimes need to find a good flavour combination that works with the strong oak and tobacco notes that are prevalent in this style of rum. I like to start with pineapple and orange juice as I think this provides a nice combination of fruit and acidity that works well with the Bajan Rum.

Arctic Wolf’s Bajan Rum Cocktail

1 1/2 oz Bajan rum (I suggest Cockspur 12 year Old Rum)
1 1/2 ounce Pineapple Juice
1 1/2 ounce Orange Juice
1 teaspoon of simple syrup
1 squeeze of fresh Lime Juice

Fill a Collins glass with chipped Ice
Add the first four ingredients one at a time pouring slowly over the ice
Cut a Lime in quarters and squeeze one-quarter of the lime over the cocktail into the drink.
Stir and serve.
